Tofu Scramble

This flavorful tofu scramble is a great way to start the morning and tastes great on top of grits. 


Ingredients

  • 1 shallot

  • 1 clove of garlic

  • 2 Tbsp of olive oil 

  • 1 package of medium to super firm tofu (16oz)*

  • 1 tsp chili powder

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 1/2 tsp smoked paprika

  • 1/4 tsp onion power

  • dash of tumeric

  • sun dried tomatoes in oil

  • handful of spinach

Instructions

  1. Prepare tofu, pressing out excess water, and crumbling with hands into a bowl.

  2. Heat oil in non-stick skillet over medium-high heat. Dice shallot and garlic.

  3. Once skillet is heated, sautée shallot until lightly browned, seasoning to taste. Add in garlic and stir together. 

  4. Add in tofu, mixing with shallots and garlic. Add in spices, stirring until tofu is evenly coated.

  5. Roughly chop spinach and slice sundried tomatoes into strips if not pre-sliced. Add in sundried tomatoes and spinach, cook everything together for a few minutes.

  6. Reduce heat to let cool and enjoy!

    Notes

    * Medium and firm tofu you may need to press out excess water. Super firm tofu you may be able to use right away.
