Sugar Cookies

A quick and easy recipe for soft sugar cookies with sprinkles. 



Ingredients

  • 1/2 cup vegan butter softened to room temperature

  • 1 Tbsp chia seeds

  • 2 Tbsp of water

  • 1/2 cup of sugar

  • 1 tsp vanilla extract

  • 1 cup of all-purpose flour

  • 1 tsp of baking powder 

  • nonpareil sprinkles

Instructions

  1. Preheat oven to 350F. Line baking sheets. 

  2. In a large bowl, whisk together softened butter, chia seeds, sugar, water, and vanilla extract until well combined and fluffy.

  3. Add in flour and baking powder. Mix into a well-combined sticky dough. 

  4. Place sprinkles in a small bowl.

  5. Scoop out 1 Tbsp of dough at a time and roll into a ball. Dip ball into sprinkles so half of the ball is covered. Transfer to baking sheets, flattening cookies about half-way. Space cookies one to two inches apart. 

  6. Bake cookies for 12 minutes. 

  7. Let cookies cool and enjoy!
