Sugar Cookies
A quick and easy recipe for soft sugar cookies with sprinkles.
Ingredients
1/2 cup vegan butter softened to room temperature
1 Tbsp chia seeds
2 Tbsp of water
1/2 cup of sugar
1 tsp vanilla extract
1 cup of all-purpose flour
1 tsp of baking powder
nonpareil sprinkles
Instructions
Preheat oven to 350F. Line baking sheets.
In a large bowl, whisk together softened butter, chia seeds, sugar, water, and vanilla extract until well combined and fluffy.
Add in flour and baking powder. Mix into a well-combined sticky dough.
Place sprinkles in a small bowl.
Scoop out 1 Tbsp of dough at a time and roll into a ball. Dip ball into sprinkles so half of the ball is covered. Transfer to baking sheets, flattening cookies about half-way. Space cookies one to two inches apart.
Bake cookies for 12 minutes.
