Glazed Meatloaf
You’d hardly believe this meatloaf is vegan. Eat with peas and potatoes for a classic meal.
Ingredients
Meatloaf Ingredients
1 Tbsp oil
2 packages of Impossible beef (12oz)
1 medium onion, diced
2 Tbsp vegan yogurt
3 garlic cloves, minced
3 Tbsp ketchup
3 Tbsp fresh parsley, finely chopped
3/4 cup Panko bread crumbs
1/3 cup vegan milk
1 & 1/2 tsp salt
1 & 1/2 tsp Italian seasoning
1/4 tsp black pepper
1/2 tsp smoked paprika
Glaze Ingredients
3/4 cup ketchup
1 & 1/2 tsp white vinegar
2 & 1/2 Tbsp brown sugar
1 tsp garlic powder
1/2 tsp onion powder
1/4 tsp black pepper
1/4 tsp salt
Instructions
Preheat oven to 375F. Grease a 9″x5″ loaf pan with oil.
Mix ingredients for meatloaf in a large bowl.
Add ingredients to loaf pan and shape to fit. Cover and bake for 40 minutes.
While meatloaf bakes, mix ingredients for glaze in a small bowl.
After 40 minutes is up, take loaf from oven and remove covering. Spread glaze evenly over the top of loaf. Place back in oven uncovered for 15 to 20 minutes.
Let meatloaf rest after baking. Slice and enjoy.
